
🎧 Ridgefield’s Food Scene Is Expanding Fast in 2026
The city of Ridgefield’s May 2026 Development Summary shows multiple restaurants, coffee shops, specialty beverage businesses and grocery projects either under construction, under review or actively moving through the permitting process

There is no shortage of eateries in the city of ridges and fields, but a new wave of food-centric businesses is slated to provide Ridgefield residents with a broader menu, from dining to grocery shopping.
The city of Ridgefield’s May 2026 Development Summary shows multiple restaurants, coffee shops, specialty beverage businesses and grocery projects either under construction, under review or actively moving through the permitting process.
Among the most notable and visible projects is Grocery Outlet, which received permits for the building shell in January. Grocery Outlet is slated to be a 16,902-square-foot discount grocery retailer that will anchor the Royle Ridge Station mixed-use project at 4618 Pioneer Street.
Restaurant development has been particularly active at Union Ridge Town Center, Hillhurst Commercial Center and Legacy Trails.
At Union Ridge Town Center — anchored by Costco and Washington’s first In-N-Out Burger — Jersey Mike’s Subs received tenant improvement permits in March for a 1,160-square-foot location. The Ridgefield sub shop will be the company’s first location in north Clark County. Jersey Mike’s Subs currently operates in Salmon Creek, Hazel Dell and East Vancouver.
Wanpo Tea Shop, having opened in the Union Ridge Town Center in late May, brings a new offering to Ridgefield with handcrafted Taiwanese teas and bobas. The tea shop is open daily from 11 a.m. -6 p.m. at 420 North 56th Place, Unit 105.
Meanwhile, plans for a Chick-fil-A location at 430 North 56th Place remain under engineering review. The project is currently awaiting resubmittal from the applicant. The proposed Chick-fil-A location sits directly north of In-N-Out Burger.
The Hillhurst Commercial Center is emerging as a brand-new dining destination to the city, with walkability in hand as the project lands amongst a broad area of residential neighborhoods near Ridgefield High School. Permits have been issued for Fika Coffee, Cheeky Noodles and Mahoney’s Public House. Fika Coffee received permits for a 2,337-square-foot space in late 2025, while Cheeky Noodles secured permits for a neighboring 1,601-square-foot restaurant space. Mahoney’s received approval for its 2,688-square-foot tenant improvement project in March.
The Hillhurst Commercial Center has experienced a variety of delays over the past decade. With vertical construction recently completed and interior business projects now underway, the project has been discussed since 2016 as a three-building neighborhood commercial zone.
Fika, a Nordic-inspired coffeehouse, includes menu options from breakfast to lunch with avocado toast, a variety of soups, baked goods and more. The Fika Coffee website states the location is opening soon.
The Cheeky Noodles website listed May 2026 as the opening date, but their social media now says June. The restaurant is slated to bring an expansive menu of macaroni dishes.
As for Mahoney’s Public House, which currently has a location in the Lake Shore/Felida area north of Vancouver proper near the headwaters of the Lake River, the Ridgefield location downstream is listed in some social media posts as possibly opening this summer.
Additional restaurant activity is taking place in the retail space of the Legacy Trails mixed-use project at 536 South Royle Road. Zaiqa Indian Cuisine received permits in April for a 2,068-square-foot restaurant. Zaiqa’s website does not list an opening date, but it does state that it is opening soon in Ridgefield. They currently operate locations on Portland’s South Waterfront, Wilsonville and in Lake Oswego. Another restaurant, Niyom Thai Kitchen, also secured permits in May for a 2,447-square-foot space in the same development.
Future food options could extend beyond those already permitted.
Early proposals for new shopping center: Discovery Station
A proposed retail or grocery store project south of Discovery Drive and Pioneer Street recently went under review for a zoning confirmation request. On the Ridgefield Development Activity Map, the location is labeled both the PacTrust Ridgefield Corporate Park and the seven-lot MAJ Development Discovery Station project.
The Discovery Station project is listed at just under 28 acres across seven lots on the development activity map. According to the project narrative submitted prior to a scheduled pre-application conference, phase one would include a 4,791-square-foot convenience store with 12 fueling stations. Adding to the coffee scene will be a 1,025-square-foot coffee kiosk with walk-up and drive-through service. Prior MAJ Development Corporation projects listed on their website include coffee companies like Black Rock Coffee, Dutch Bros and Starbucks. Phase one is also detailed to feature a drive-through bank and car wash building.
According to the proposed site plan for the Discovery Station project, which is subject to change as the project moves forward, future phases may include a large single-tenant retail building and an apartment complex.
